Many many things going on...therefore no time to even think about writing on my blog...so...here's something to entertain...
Sweet & Spicy Thai lettuce wraps! About 15 minutes max
Ingredients
350 grms Ground pork
2 cups Chopped eggplant, bell peppers, zucchini in cubes
1 Chopped shallot
1 Handful of bean sprouts fresh or not
1 Minced garlic clove
1 Chopped Long pepper...spicy: fresh jalapeño, habanero,...your choice!
1 Lettuce head - any that has flat leaves and you can make a taco with =)
Paprika
Salt/pepper & Herbes de provence (yea, I know not thai..w/e)
1 bush Chopped Fresh cilantro
Sweet Chili sauce - add to taste
Condiments: (homemade or store bought) Guacamole & creme fraiche =)
Add the shallots, garlic, veggies and pepper to a saute pan and cook it for about 5-8 minutes. Add ground pork & spices and when it has browned add the sweet chili sauce & bean sprouts (this is if you want the fresh crunch of the bean sprouts...add with the meat if you want them soft). Serve with cilantro on top and have the leaves of the lettuce washed and separated on the side. Make tacos with the lettuce, add guacamole and creme fraiche. Would you like an extra kick? Add fresh jalapeño to the guacamole or add some Sriracha to your taquito =).
