850 grams Lentils drained 1/2 way
1 large shallot chopped
1 red bell pepper chopped
1 smoked sausage chopped
thyme
1 tbs olive oil
1/2 cup white wine
1 bay leaf
To a medium sauce pan add the olive oil, sausage, bell peppers, and shallots and saute at med-high. Once everything's nicely cooked and add the can of lentils, thyme, bay leaf and salt to taste, stir for 5 minutes. Bring up the temperature to boiling and add the white wine. If the mixture gets too dry, add some water. Serve and enjoy =)
